* gnu/packages/emacs-xyz.scm (emacs-pdf-tools): Update.

Seems there is a new maintainer of the project
https://github.com/politza/pdf-tools/issues/659

Changed url to fork.

This update is required to make pdf-tools work properly for HiDPI screens.

Tested it on emacs-next-pgtk with latest commit from feature/pgtk branch,
using Sway wayland compositor with scaling factor 2.
