Sorry, that was not very well thought-out, was it? Try

  (rx "("
      (* whitespace)
      (? (regexp ert-font-lock--face-symbol-re)
         (* (+ whitespace)
            (regexp ert-font-lock--face-symbol-re))
         (* whitespace))
      ")")

instead. Not as pretty but should actually work.
