FWIW, when I used java things in Guix, I manually did 
CLASSPATH=$GUIX_ENVIRONMENT/... or the CLI equivalent (some option 
argument of 'java').

Some more automatisation, e.g. in the form of search paths as you 
propose, would be nice though.
