I don't use Gnus-mock or anything.  Here's my recipe:

emacs -Q
M-: (setq message-hidden-headers '("^Face"
                               "^From"
                               "^Mail-Copies-To"
                               "^References"
                               "^X-Draft-From"
                               "^X-Face") ) RET
C-x m
<edit the headers so they're valid>
C-c C-c
smtp RET
quimby.gnus.org RET
n
