Thanks for the tip. Unfortunately, I still see the error:

Error: Your GStreamer installation is missing a plug-in.
=> file cannot be played and will be removed from playlist

after running:

guix environment --ad-hoc gst-plugins-base gst-plugins-good
gst-plugins-bad gst-plugins-ugly gst123 -- gst123
~/path/to/music-file.mp3
