While internally org-table-convert-region is used receiving optional 
argument SEPARATOR:

\(4)      Use the comma as a field separator
\(16)     Use a TAB as field separator

Thus docu should mention the comma as possible separator.

Isn't it covered by the following line?

regexp   When a regular expression, use it to match the separator
