Presumably you forgot to double the backslashes like in the example,
e.g., something like

    (defcustom python-shell-interpreter
       "C:\Users\\Matt\\Anaconda\\python.exe"...
          ^^

I changed the text in emacs-26 to forward slashes to reduce the chances
of confusion.
